I have 4 steaks, 2 are 2 inches think and I will TRex them tommarow. 2 are only about 1 inch thick. I am thinking that If I sear them for 2 mins per side on a caste iron grate at 750, that should just bout cook them? Thoughts?

MasterMason,[p]At 1", 2 min/side will be just about right after they rest...[p]Enjoy--Jeff

MasterMason,
Just 'bout...ya. 2" is thick..
I would sear, then cook offset using Maple, Apple or Hickory. Don't forget to brush them with an olive oil hash.
