I go 250 dome indirect with drip pan. Cook until 195 internal temp. Pull and wrap in foil and towel and let sit for an hour or so. Some say last step not needed, but I have jest always done it. I usually coat in yellow mustard then bad byrons butt rub. Apple wood for smoking. Don't open the dome until up to temp!!!

Coat in yellow mustard, apply rub of choice(pretty thick), 300 dome and cook until 205 internal temp. Let cool till you can handle it and pull with two forks. Forget about time and just worry with meat temp.
Be careful, man! I've got a beverage here.
