Looks great. Did you make fajitas with it or anything? I see you have the grate extender. Doesn't get much love on the forums, but I have it and its not a bad piece of equipment. Not as versatile as the AR, but it does its job.

I am usually pretty lucky when it comes to skirt. My local publix in Columbia SC usually has it pretty cheap. It might be dog or cat, but looks and tastes like skirt 8-}Columbia, SC --- LBGE 2011 -- MINI BGE 2013

Sometimes when I am in restaurant depot I find loose skirt steaks for cheap. One is opening near me as well, oh yeah.

I like your set up. Is that the spider with a small grate on top (that could also flip down closer to the coals?) It looks like it would be easier to get to your 1st level food than it would be if you had the adjustable rig.

The norm for me is to use a SS small grill on the spider. But this fire was very hot so I had pulled the firering and was sitting on the firebox. Do have adj rig, just one of the very few times I was not using it. Actually we like the Skirt steaks as steaks I make some black beans and rice to go with it.. I am using the grate extender both sides fold up so you can access the lower level.
