Wings on the BGE

Cooking wings on the Big Green Egg. Just put on at 9 am, will be ready by 11 am. Stop by and try some if you are in the area. First batch is seasoned with Todd's Dirt.

We do ours indirect with the plate setter legs up for 2 hours at 275. After the first hour we flip the wings. To make the skins a little more crispy we let the wings sit in the fridge uncovered for an hour after they are seasoned to draw out some of the moisture from the skin.
You can do wings many ways... That's just our favorite way. Good luck.

@BuckeyeBob -- I coat with a dry rub & a dusting of cornstarch for crispiness. I cook them raised/direct for about an hour at ~350. Like Wassis said, there are many ways...
