Stuffed Pork Loin with a Wedge Cut

I just did the side cut stuffed loin with bacon wrap but I don't want the bacon this time. I thought if I did a wedge cut (like the original subway sub bread cut) and put my cashews, pineapple and bbq sauce, put back together, tie and add dry rub. Will that work or are the juices going to collect in the pocket I cut out of the loin and ruin the meal? Maybe just do a cut so I can roll everything inside?

Suppose to be 55° here in the northland and thought I got to grill something.
