    lschut,
I would trim and cut some nice big 2 /2.5 thick filets maranite them in peanut oil and T-Rex them. The filets are grilled with grain facing up.For finishing I would add a chunk of peach. If you want to get fancy cut some larger peices and grill the same method with the grain running horizantally against the heat. A nice touch also is to let some butter soften at room temp and add some blue cheese. Put the butter on after removing from the egg. If you are not sure what the T Rex method is check out the Naked Wizz website. Enjoy.

lschut,[p]You'll find a lot of good idea for them from members. Stuffed is really good, however, if you really want to keep it simples. Wrap in bacon and sprinkle on favorite rub. Direct Heat @ 350. and turn about every 10mins. Shouldn't take too long. Most important....do not over cook. Pull @ about 145 internal temp, and let it sit for 10 - 15 mins before carving. The temp will creep up to 150-155 and you'll be all set.
