Received a Big Green Egg cookbook.  The instruction$ are mentioning many time$.  I have the $$.  Where can I find out more on thi$ and do you recommend getting one?

I think these have been replaced with the stainless steel grids.

Yes, the current stainless cooking grids were an upgrade over the porcelain coated.
