Kalua Pig and good morning.

Good morning,
The pig is on, started the fire at 4, pig on at 5, dome 250 and chugging along real nice. Looks like a great day here for a BBQ.[p]I loaded up lump to the middle of the fire ring so I should be good the whole day. To leaf or not to leaf? I leafed. The banana leaves made a nice package and they are held in place with two bamboo skewers. Soon after I placed the package in the egg a nice green tea smell came off the egg from the banana leaves. I think this is going to work. Certainly, the leaves will help retain moisture- but on the other hand smoke flavor will be blocked. Well, I'm going for kalua pig and in Hawaii they use leaves.[p]About coconut shell smoke- it's hard to get smoking. Again, the banana leaves are blocking the smoke so I'm not adding any more shell.
Diane is going to find the tape of our Hawaiian trip so we can relive some of our adventures. Oh, that reminds me, have any of you tasted Hawaiian beef jerky? It was so good I orderd a box load and had it shipped to our home. It was a black pepper teriyaki jerky that made my mouth water. At high noon it's free beer. I'll post a picture later. Aloha!

    Clay Q, the only thing you left out was your address! I got the message that at noon it's free beer, but where? :-) And I will tell you that unless you want 20 folks who you know only by handles to show up, you won't dare post that address. I know these folks and they will come for free beer.[p]Sounds fun. Looking forward to the pictures. Are you using a whole suckling pig or just some pig parts?

    Yeah, I better keep a low profile. :o)[p]I'm cooking a picnic shoulder, skin on. It fits in my large egg with just a little room to spare especially with the banana leaf wrap taking up some space. Actually it's just right. Gonna check the egg then take a little cat nap-Hawaiian music is on and I'm starting to drift........

    Thanks Greg. I guess I should have bought some of your wood. Coconut shells just don't make it for smoking. [p]Ok, here goes; Love pig roasted and beer. Lalawe pua'a ho'o'oma a pia bia. He he he he. Well, the pig roast is at 165 degrees and doing fine. I'm thinking of taking it to 200- we'll see what happens.[p]Aloha!
