Carne guisada

Carne guisada translated means stewed meat.  I cooked a batch up this weekend, no picture,but it did happen.  Here is my recipe

Carne guisada 

Ingredients 
3-4 lbs chuck roast cut into1 inch cubes 
4-6 whole cloves garlic 
2 tablespoons of EVOO, grape seed oil or lard 
1 large white onion quartered 
2-3 anchos seeded and sliced 
1 jalapeño seeded and sliced 
1 serrano seeded and sliced 
1 bay leaf 
1 14 oz of roasted tomatoes drained, or 2 fresh tomatoes (opt) 
1 tablespoon cumin 
1 ½ tablespoons Mexican oregano - don’t use mediterranean oregano 
2 cups of either chicken stock, dark beer or water (or combination) 
1 tablespoon of New Mexico chili powder (do not use the bottled chili powder blend) 

Cut meat into 1 inch cubes (excess fat trimmed). To a DO add 1 tablespoon oil and brown meat. Remove browned meat from DO and set aside. If needed, add the other tablespoon of oil to the DO, the cumin and chili powder and bloom spices (about 30 seconds don’t burn spices). Add onions chiles and whole garlic and sauté until onions are soft. Add meat (and juices) back to the DO. Cover and reduce heat to lowest setting. 
Cook for 20 minutes. Add bay leaf and Mexican oregano, cover and simmer for about 5 minutes. 
Add the 2 cups of your preferred liquid, stock, beer or water (or combination of the three) and optional tomatoes and bring to a rapid boil. Reduce heat to very low and simmer for about 4-5 hours. (Note: at this point I put the DO on the egg with temp stable at 225 cooked indirect on the grill. Last ½ hour remove the top and add wood chips if desired) 
The cubed meat will fall apart while cooking which will thicken the gravy. 
Serve on warmed corn or flour tortilla garnished with salsa, avocados, and thinly sliced radishes. 

About the chilies. Any combination and quantity can be used to obtain desired heat level. The anchos are not very hot usually, but can sometimes pack a punch. Taste the raw chilies and then use quantity that suits your tastes.

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
