baby backs a day ahead

I have been tasked to make ribs for my son-in-laws birthday. He wants them Thursday night. I will need to cook them Wednesday. How should I go about re-heating them? I have 5 slabs of baby backs I am going to do.

    cook completely, reheat in foil either on his gasser or in a low oven.  i bring a HD foil tray with foil lid.  ribs in it, maybe add a little beer or water (not really needed, and doesn't do anything but smell good).  the wet environment may help it heat a little faster, but not to any great extent

    you can alternately cook completely, but leave off sauce (if sauce is your thing).  then reheat while adding sauce on his grill
