    Simple recipe for me that the family loves, and I'm actually making tonight. Sprinkle with some 

    Tony Chachere's, grill to desired temp and devour.

  • Ya lookin for a dircet or indirect,Any how cook to temp.with you best marinade or dry rub. It will be to quick to smoke for a direct cook,Prob about 5-7 min.depending on thickness

  • Season. Half cup wosrchesxhierer sauce, half cup soy sauce, 1/4 cup hot sauce, I use tex Pete. A little brown sugar. Let sit long as you can. I cookem at 350 or so, direct. I only grill bone in or 1" plus thick.

  • I just grill them without any rub or marinate.  Just pepper.  But, at the end, I put a pepper jelly glaze on the top to kick it up a notch.  My fav is Passion Jalapeno.

  • I just wet them with Worcestershire sauce and rub them with a steak rub.  I like Texas BBQ Rub.  Then I cook them direct at about 4 mins/ side, and then flip them one more time and shut it down.  Similar to the way the manual says to cook steaks.
