Thermopen arrived today.

So the Thermopen arrived today. I gotta say this thing is elegant. Overpriced but elegant so who cares? It comes complete with a certificate including the name of the person that calibrated it. I used it for gyros. The wife makes up the meat, lamb and some other stuff including something green. I squish it out in a quart freezer bag, place in the freezer and have it standing by. She makes up the Tzatziki sauce. So I ran the egg up to 400 or so direct and tossed on the meat rock solid frozen. No fall-apart that way. Thermopen worked perfectly and the meat came off at just the right temp, I like 160 for ground lamb. Thermopen has no switches or buttons. Just open it like a pocket knife and insert into meat. Super simple quick and no need to stay sober. I count it as a great investment.

    Any overpriced, elegant, precision instrument that I can operate while less than sober is an amazing investment. Is it able to be re-calibrated if it starts to wander? If they were truly confident in the calibration they would include the phone # of the dude that calibrated it, lol.
  • There's a reference in the instruction about using the "trim" to adjust calibration.  Also illustrations and two pages of instruction on how to properly check calibration.  I haven't bothered as of yet.  Rachel Cooper issued my certificate of calibration but she didn't provide her phone number.  There's also handwritten initials "S.T." under "calibrated by".  "For a fee" you can get it re-calibrated and a new certificate.  I figure I'll break it, lose it or the dogs will get it before I need that.
