Cutting a 10# butt into 2 5# butts
I am thinking of cutting a 10# pork shoulder/butt into 2 each 5# butts to give me additional bark and to make it easier to save one for freezing. I also am assuming that the cooking time for 2 5# butts will be less than one 10# butt (about 10 hours vs 20 hours).
Is my rationale here valid or would it be better to cook the whole 10# butt?

Cutting it in half is really up to you, but I can attest to the fact that it cuts the cook time in half. Check out my thread,"I need help, I'm about to panic" I started that about three hours ago.
