Prime Rib Quantity Per Person Question

Hey Everyone,
I plan on doing a salt crusted prime rib for Christmas Eve dinner this year and plan to have 8 adults over. How big of prime rib should I get?

Generally speaking, I would figure a 1/2 lb. of cooked meat per person. Allowing for shrinkage I would get a 5 pounder for 8 adults. That's if it is a boneless prime rib, if you are getting a bone-in rib, you need to allow for the weight of the bones. With a bone-in prime rib, I usually figure 1# per person - there's nothing like a prime rib sandwich the next day or so.

Here's something I should have added. I'm doing a boneless one on Sunday for 4 adults and I bought a 4-1/2 pounder, because I wanted some leftovers. My wife likes to make a french dip sandwich for lunch the next day and I like a steak sandwich about 1/4" thick on focaccia bread with some of my mild horse radish sauce from the night before.
Here's a great recipe for a mild horse radish sauce. This is also good on baked potatoes, asparagus and as a spread on sandwichs.
1-1/2 cups good mayo, 3 Tbs Dijon mustard, 1-1/2 Tbs Whole grain mustard, 1 Tbs prepared horse radish, 1/3 cup sour cream, and 1/4 tsp kosher salt. Mix it all together and enjoy. If you try this, I'll bet some of your guests will be asking for the recipe.

We figure one rib per person

One rib per person would be about a 2" thick or better piece of meat. Per Rouxbe.com, you should go for 1/2 lb per person for boneless and 3/4 lb per person for bone in.
On another note, if you can ask the butcher for the "first cut" (ribs 9-12). That part contains the most defined part of the ribeye and is more tender.
