Timing after the turkey is cooked

I'm cooking a turkey using Mad Max's recipe this year.  This is my first time cooking a turkey any way.

I'm trying to coordinate when I should start cooking the turkey to when we will actually sit down for dinner.

I understand how long it will take to cook, but once it's cooked, does it matter when we eat it?  I'll need to make the gravy afterwards, so it will probably sit for an hour after it's off the grill anyways.  Is that too long for it to sit?  What if we aren't ready to eat (slow people :)  ), will it mess up the turkey if it sits too long?
