What is the ideal way to setup the egg for smoking a turkey?  I do not have a V-rack.  I only have what came standard with the egg.  I do have an aluminum pan that i just bought from wally-world. Should I put it under the grate, on the plate-setter and the turkey directly on the grate?

You can do it that way. I have and I like it better than the v-rack. Just be careful of the drip pan burning the drippings. Spacers between the plate setter and pan or a little liquid in the pan or both.
