Funny that you bring this up now ... as I type, I have a corn beef brisket on my egg now to make pastrami!
According to my friend Deejay Deb, and I followed her direction, I rinsed off the pickling brine, rubbed it with crushed black pepper, juniper berries and coriander, wrapped tight in plastic wrap, left in fridge for 2 to 3 days and then on the smoker.
She says if you just smoke the corned beef you have 'beef bacon' ... not sure why?
She has a website and forum, here is the link to pastrami: http://www.deejayssmokepit.net/pastrami.htm

i've got a cryo packed corned beef brisket from my local grocer. as far as i can tell, i should run in in pepper and coriander, then let it sit for 2 days before a low and slow is applied. i dont want bacon, and i dont want to take a piece of meat and turn it into corn beef. i want start with corn beef and either end out with smoked corned beef or pastrami. Sounds like smoked corn beef is not really an option for some reason (which is why there is so little mentioned about it on the forum), so pastrami sounds like a good option.Funny that you bring this up now ... as I type, I have a corn beef brisket on my egg now to make pastrami!
