Greetings egg heads:   I cooked a 12 lb. turkey on the egg following a recipe in the egg cookbook.  As per the recipe I had the egg preheated to 400

with a good fire going, I then put the plate setter in legs up (per recipe) and added the turkey on a V rack.  The temp. dropped to 200 and even with the vents wide open I couldn,t get her over 200   As we had company I was in a fix so I flipped the plate setter ( legs down)  the temp. started rising immediately the turkey was excellent but a little behind schedule (actually a lot)

It seemed as soon as I added the plate setter (legs up) it smothered the fire   Is cooking with the plate setter legs up a good idea??????????
