at 225 deg., I have to cook my baby backs for twelve hours to get them right. I have a digi q controller, and I have a surface thermometer also, so no question of temp. Anybody?

12 hours????? WOW....I do mine in 4ish at 275 and they are perfect every time. However, if it works for you, then go with that.Kevin Jacques

I second the WOW. Broke in my new Egg on Saturday with ribs. Did baby backs 4 hours at 220-230. Perfect.

Whatever it takes and as long as they taste good is what I say. My longest bb is 6 hours though.
