I've got some giant boneless pork ribs to make. My wife wants to cook 'em on the crock pot and I told her that was a crock. (bad joke). Anyway, can you all suggest a recipe and cooking temps for these bad boys? Thanks.

  • I have not done these in years
That is a Pork Butt cut in to strips
But if I were to I would think a reverse sear type cook would be best
Smoke em till they get close to your target temp
(If you take em to 198 like pork butt They maybe dry)
Then fire it up and finish em off and caramelize the sauce

  • Thanks Tom. I'll give it a try. I think I'm out of applewood (which is my favorite) but I've got plenty of Cherry i'd like to try.
