Standing Rib Roast Makes Me Happy!

Just like the subject line says...
Used Mad Max's Prime Rib Method for a choice three bone standing rib roast. Roasted some taters and a medley of red peppers, onions and mushrooms to accompany the roast beast. I made some stovetop au jus for dipping and culinary heaven is the outcome.

If you click on the link for Mad Max's Method, it will take you to the Naked Whiz's site for a detailed description of the cooking process.
In a nutshell, stabilize the BGE at 500° F set up for indirect. Put the roast on and set the vents for ~325° F.
Cook until 125° F internal. Rest for about a half hour. Slice and serve.
Really easy cook and delicious, to boot.
