I have never used my rack before. DO you put the plate setter (legs down) first before using the rack?

I have an older version and it won't work with the plate setter in.

I did ribs this weekend using my 3-tier rack.  I put the platesetter in legs up, a drip pan on top of that, and then the 3-tier.  There is plenty of room.  Be sure to leave a bit of a gap where the probe on the dome thermometer will come down.

Maybe this will help a bit...

  • Using your cooking gloves - remove the three tear rack and close the lid back to move your meat around. It takes too long to do it with the lid open and you can get to your meat much easier with the three tear out. Also I suggest that you spray the three tear rack with Pam or somthing similar before putting meat on rack.
