Why are different grids called for in different recipes? Recipe book calls for cast iron or porcelain. My egg came with a silver grid.

    The Big Green Egg Cookbook came out right before the company switched from the standard porcelain coated grate to the Stainless Steel one that is now standard on the egg you bought. Cast iron grates are optional and make for grate searing, but you won't mess up the cook if if don't have a cast iron grate.
