Caramel-based Orange/Chipotle Sauce

1/2 cup orange marmalade 1/3 cup orange juice + 1/2 tsp zest 1/4 cup white vinegar 1 minced chipotle 1/2 tsp salt 1/3 cup water 1/3 cup sugar


Whisk everything except the water and sugar together. Add 1/3 cup water to a heavy pot, pour 1/3 cup sugar into the center, bring to a boil, and boil until mixture is thick and straw colored, 3 to 4 minutes; reduce heat and cook 1 to 2 minutes more. Remove from heat to add other ingredients, return to heat and whisk constantly for two more minutes, it's done.
