Grand Mariner Liqueur Ham Glaze

Will Hoyle - AKA willrev
edited November -1 in Pork

Glaze: 1 jar of orange marmelade (with pieces of fruit) 1 teaspoon of ground cloves 1 tablespoon of butter 1/2 to 3/4 cup of Grand Marnier French Cognac Put all contents in a small saucepan and reduce over low heat to thicken. Hold back a little and once ham is sliced, pour remaining glaze over the slices.

Take a Pork Shoulder bone in and smoke on the grill studded with whole cloves. I begin applying the glaze about an hour before it is done. It chars a little, but is so good. Be sure to cross hatch the fat with a knife so the glaze can get into the meat a little.
