Oven Roasted Tomato Sauce

Ingredients

  • 1 Tsp sugar
  • 8 Cup Roma tomatoes, Quartered
  • 1 Cup onion, chopped
  • 1/2 Cup olive oil
  • 5 Garlic Clove, Minced
  • 2 Tsp kosher salt
  • 1/2 Cup fresh basil, chiffonade
  • 1 Tsp red pepper flakes

Instructions

Preheat oven to 450.

Combine first 6 ingredients in a large casserole dish. Toss with olive oil and roast 35-40 minutes, or until tomatoes have softened. Remove from oven and mash with a potato masher, keeping tomatoes a bit chunky. Stir in basil (fresh basil is a must for this recipe!)

Makes enough sauce for 1 recipe of Grilled Pizza AND leftovers for pasta the next evening!
