Tweety's Savory Bread Pudding Muffins

Ingredients

  • 1 french baguette
  • 1/2 lb breakfast sausage (cooked)
  • 4 to 6 eggs
  • 2 cups milk or heavy whipping cream
  • 1 cup shredded cheddar
  • Salt & Pepper
  • Non stick cooking spray
  • Syrup

Instructions

Split baguette in half lengthwise and brush with melted butter or olive oil.  Place buttered side down on grate and cook direct until toasted.

Cube the toasted bread (very small pieces if using a mini muffin pan) then set aside.

In a large mixing bowl, add the cooked sausage, beaten eggs, milk or cream, cheese and salt & pepper and mix well.

Add bread cubes and mix well.  Let sit for 30 minutes stirring occassionally until all the liquid has soaked into the bread.

Spray mini muffin tin with non-stick cooking spray, then spoon mixture into the pan.

Bake indirect at 350 degrees for about 30 minutes or until done.

Notes

I serve these warm with a drizzle of maple syrup. We think it tastes like a Denny's Grand Slam breakfast all in one bite!

You can sustitute with any meat or cheese. And if you want to make it healthier you could use egg whites, skim milk, reduced fat sausage or canadian bacon and reduced fat cheese. But then, what's the point? Enjoy.
