Peanut Beef Skewers

Ingredients

1/4 cup finely chopped Vidalia onions
1/4 cup Natural Chunky peanut butter
2 tablespoons lemon juice
2 tablespoons soy sauce
4 1/2 teaspoons brown sugar
1 tablespoon water (May need more if the peanut butter is thick)
2 Teaspoons garlic powder or up to 4 garlic cloves, minced
1 teaspoon ground coriander
1/8 teaspoon cayenne pepper
3/4 pound flank steak sliced into 3/8 inch slices across the grain

Instructions

In a bowl, combine the first nine ingredients; mix well. Pour 6 tablespoons marinade into a large resealable plastic bag; add the beef. Seal bag and turn to coat; refrigerate for at least 2 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade for use as a sauce.

Drain and discard marinade from beef. Thread beef onto eight metal or soaked wooden skewers in an "S" shape. Grill, uncovered direct heat, at 400 for 4 minutes on each side or until meat reaches desired doneness.

Serve on skewers.  You can offer warmed sauce in a dish to spoon on the beef.
