Boatman's Bang Bang Shrimp

<h4>Ingredients</h4><P><STRONG>Recipe for the sauce:</STRONG> <BR>1/2 cup mayo <BR>1 TBS plus 1 tsp Asian chili sauce <BR>2 tsp honey <BR>Kosher salt </P>
<P><STRONG>For the Shrimp:</STRONG> <BR>Vegetable oil for frying <BR>2 large eggs <BR>3/4 cup flour <BR>1/2 cup cornstarch <BR>Kosher salt & pepper <BR>1 1/2 pounds of shrimp peeled <BR>scallions for garnish</P><h4>Instructions</h4><P><STRONG>Sauce:</STRONG> <BR>Mix mayo, chili sauce, honey, 1/4 tsp salt and 1 tsp water in a large bowl...set aside </P>
<P><STRONG>Shrimp:</STRONG> <BR>Heat 2 inches of oil in a dutch oven over medium heat until it is 350 degrees or so. </P>
<P>Whisk the eggs in a shallow bowl. Whisk the flour, cornstarch, and 1 tsp each salt and pepper in another bowl. </P>
<P>Dredge the shrimp in the egg then in the flour to thickly coat. Fry in the oil about 1-2 minutes until golden brown. Transfer to paper towel with a slotted spoon to drain.</P>
