Dougs BBQ Coleslaw

Ingredients
6 Slices of Bacon (Fried)
1 Head of Cabbage
1 Head of Radicchio
1 Bunch of Scallions
2 Carrots
1/2 C Coleslaw dressing (Marzetti is really good)
1 T. Rib Rub or whatever rub your are using with your meat.
2 T. of your favorite BBQ Sauce
2 T. Bacon Drippins
1 T. Kosher Salt Fresh Ground Pepper to taste
Instructions
Fry up the bacon crisp. It is easier to chop into bits that way. Chop into bits and set aside. We like our coleslaw chopped large (compared to store coleslaw). But you can chop the cabbage and radicchio as coarse as you want. Chop the he4ad of cabbage and the radicchio and add to a large bowl. Then chop scallions, Carrots and add them to the bowl. Toss slaw to mix. Then add Crumbled Bacon, Slaw Dressing, Rub, BBQ Sauce, Drippins, Salt and pepper. Toss again. Chill at least 6 hours before serving.Notes
Try to make this at least 6 hours ahead of time. The longer it sits the better it gets.Number of Servings: 8
