Smith's Prime (Choice) Rib
Ingredients
Steak Seasoning (Montreal is good but any can be used)Kosher Salt
Pepper
Moore’s (like Dales but less salt)
Mustard
Instructions
First coat the entire roast with a thin layer of mustard. Then pat down with the Moore’s seasoning. Next, place seasoning (salt, pepper, and steak seasoning) all over the roast. Make sure your roast is at room temp before placing on the grill.
Get your egg to 650.
Sear your roast on both “meaty sides” and “fatty side” for 3 min each, for a total of 9 to 10 minutes.
Take your meat off of the grill and let the egg settle to 350.
Now for the easy part. Place a thermometer in the center of the roast and when it gets to 128 take it off for a medium rare delight!!! A horse radish sauce goes great with it.
Notes
I looked all over for "prime rib". I was told that grocery stores have choice at best. It was great!!!!!!Number of Servings: 4
