Red Chile Enchilada Sauce

Ingredients2 Tbsp vegetable oil1 medium onion, finely chopped2 cloves garlic, minced2 Tbsp flour3-4 Tbsp red chile powder (more = hotter sauce)1/4 tsp ground cumin3 cups waterSalt to taste InstructionsHeat the oil and sautee the onion and garlic until soft and slightly brown. Add the flour and cook until the flour is browned (3-4 minutes) – be careful not to burn. Mix in the chile powder and cumin and heat for a couple minutes. Add water and bring to a slow boil, then reduce heat and slowly simmer for 15-20 minutes until desired consistency is achieved. NotesFor a few variations you can substitute equal amounts of ancho or chipotle powders for the red chile powder. (i.e. add 2 Tbsp red chile powder and 1 Tbsp ancho powder for a total of 3 Tbsp of powder).Number of Servings: Time to Prepare: 30-40 minutes
