Hodag Cookies

<h4>Ingredients</h4><P>4 links of Italian sausage (or your favorite sausage)</P>
<P>1/4 medium onion</P>
<P>1/4 medium green pepper</P>
<P>8 Bays English muffin halves</P>
<P>Grated cheese, chedder or mozzarella or whatever you like</P>
<P>6oz. tomato paste, </P>
<P>Dizzy Pig Seasoning, your choice</P><h4>Instructions</h4><P>Set up your cooker for grilling direct and let it settle in at 325-350 degrees dome.</P>
<P>In a food processor chop onion and pepper. </P>
<P>Squeeze out the sausage from the casings and add sausage to the processor.  Blend until well mixed and smooth, about 30 seconds of blending.</P>
<P>With a butter knife spread the sausage mixture into the muffin halves so the little holes are filled and the sausage is about 1/4 inch thick over the entire surface.  Tip;  You may want to try toasting the muffin halves on the grill first before the sausage mixture is spread into the little holes as bread texture option.</P>
<P>Oil the grid and place sausage side down on grid.  Grill for about 20-25 minutes or until meat is cooked and has some crispy edges.  Tip; Check sausage after about 10 minutes of grilling and if one side of the grid is cooking faster than the other rotate grid or move the Hodags around accordingly.</P>
<P>Remove Hodags and place sausage side up onto a pizza pan and spread on a thin buttering of tomato paste then lay on the cheese.  The cheese will stick to the tomato paste.</P>
<P>Place the pizza pan with Hodags back on the grid and cook until cheese is melted, about 5-8 minutes.  Sprinkle on a dash of seasoning to each and your ready to serve Hodag Cookies!  Yummmmmm. </P>

<P> </P><h4>Notes</h4>If you have a small processor, blend sausage in two batches.
When cooking at a demo, pre-mix the sausage at home first. 8 Hodag Cookies can be sliced into halves or quarters for handouts. Quarter slices will make 32 bite size handouts!<p><b>Number of Servings:</b> </p><p><b>Time to Prepare:</b> </p>
