Quick and Easy Eastern NC Barbecue Sauce (Vinegar Based)

Ingredients

2 cups white vinegar

2 cups cider vinegar

1 tbsp sea salt

1 tbsp garlic powder

1 tbsp onion powder

1 tbsp ground black pepper

2 tbsp red pepper flakes (or to taste)

¼ tsp ground ginger

½ tsp cayenne pepper (or to taste)

 

 

 

Instructions

Bring vinegar to a slow boil in a saucepan, add dry ingredients.  Or add dry ingredients, then bring to a boil.  It really doesn't matter.  Reduce heat and simmer 20-30 minutes, then cut off heat and let cool before pouring into an appropriate container.  Shake well before each use as the solids won't all dissolve into the liquid. 

This is a simple vinegar based barbecue sauce.  "Doctoring" is encouraged.  Sliced hot peppers, dry or liquid mustard, or even a little tomato paste are good additions to this basic mix, think of it as a decent sauce on it's own but more of a canvas to make your own creation from.
