Two Potato Moussaka

Ingredients
1 lb red potatoes (large )1 lb yam or sweet potato
1 lb ground beef (ground lamb is more traditional, ground bison works too)
1 1/2 teaspoons ground cinnamon
2 cups milk
1/4 cup flour
2 tablespoons butter
1/2 teaspoon ground nutmeg
salt and pepper
1 egg yolk
3 tablespoons grated parmesan cheese
Instructions
Pre-heat Egg to 400 degrees indirect. Just lump no smoking chips or chunks. Make sure the smoke is clean.-- This is from the original recipe.. I don't like microwave potatoes
Cook red skinned potatoes in microwave for 5-7 minutes.
Cook yams in microwave for 7-9 minutes.
Thinly slice potatoes.

The idea here is to soften the potatoes so they are done when the sauce sets up. If you go this route you seriously need to be careful. You can over cook the potatoes..
Slice (1/4" or so) the raw red skins potatoes and peeled sweet potatoes. Lay them out on a baking dish or pizza pan and bake them for 15-20 minutes in your heated up egg. Remember you want them softened not fully cooked. You don't need to single layer them, but if you can do it.

While the potates are baking or being Microwaved.
In medium skillet, brown beef for 5 minutes
Add cinnamon Simmer 3 minutes.
Combine milk, flour, butter, and nutmeg in small saucepan over medium heat, stirring constantly.
Bring to boil and simmer for 1 minute.
Season with salt and pepper.
Remove from heat and whisk in egg yolk.
Almost done.
Place half of potatoes and yams on bottom of 2 quart casserole.
Layer meat mixture, then remaining potatoes and yams.
Pour sauce on top.
Sprinkle with Parmesan.
Bake for 30 minutes.
