Peabody\' famous shoulder lean
Ingredients
big bodacious pork shoulder big fresh garlic bottle mojo marinaide your favorite rubInstructions
get that big shoulder on a surface where you can work usually the night before you want to cook it. Peel an chop eds off about six to eight cloves of your fresh garlic. With a pairing knife slice nice long pieces of the garlic. Get a couple of dozen ready at a minimum. I like big fat slices to work with, so I generally just cut a clove in half. with a long pairing knife cut deep into shoulder and when the knife is removed immediately stuff a garlic piece in the hole. Continue till your hands hurt from stuffing and then add a few more inserts. Get a big gallon freezer bag or covered bowl and place shoulder inside and cover with entire bottle of mojo. Refrigerate overnight and early next morning prepare egg for a long slow cook with lots of soaked wood. Place on grill, ( your favorite rub is fine but not necessary as the mojo and garlic will bring you great flavor) and slow cook all day at about 250. Serve that afternoon for a great dining experience and make them want more.Notes
