• 5 lb ground pork
• 1 Cup your favorite bbq sauce or (BBQ Bob's Cranberry Jack BBQ Sauce)
• 3 Cup diced Vidalia onion
• 3 Cup Chopped dried cranberries
• 2.5 Tbs Salt
• 2 Tbs Dizzy Dust (fine or coarse grind)
• 2 Cup cold water
• &#189 Cup Egg Beaters
• 1/2 sleeve of Club Crackers

InstructionsMix all ingredients well in a large bowl. Let mixture sit for 24 hours and roll into Hole-e Smokes Silicone Cooking Mats, make patties or case in sausage casings. If you plan on smoking the sausage at low temperatures (140° F), use Tender quick or an alternative cure to preserve meat and insure freshness. Cook direct with a raised grate at 300° F until internal temp. reaches 170° F using Cherry smoke wood. Baste with BBQ sauce for last 10 minutes of cook. NotesNumber of Servings: Time to Prepare:
