BBQ Bob Trudnak's Cranberry Onion Pork Sausage

Ingredients
• 5 lb ground pork |
• 1 Cup your favorite bbq sauce or (BBQ Bob's Cranberry Jack BBQ Sauce) |
• 3 Cup diced Vidalia onion |
• 3 Cup Chopped dried cranberries |
• 2.5 Tbs Salt |
• 2 Tbs Dizzy Dust (fine or coarse grind) |
• 2 Cup cold water |
• ½ Cup Egg Beaters |
• 1/2 sleeve of Club Crackers |
Instructions
Mix all ingredients well in a large bowl. Let mixture sit for 24 hours and roll into Hole-e Smokes Silicone Cooking Mats, make patties or case in sausage casings. If you plan on smoking the sausage at low temperatures (140° F), use Tender quick or an alternative cure to preserve meat and insure freshness.Cook direct with a raised grate at 300° F until internal temp. reaches 170° F using Cherry smoke wood. Baste with BBQ sauce for last 10 minutes of cook.
