Simple Steak

Ingredients

• 2 Tbs Olive Oil
• 1 tsp Kosher Salt
• 1 tsp Freshly Ground Black Pepper (medium coarse)

Instructions

The real first step is to select the best cut of meat you can find. The steps below work best with a steak &#190 to one inch thick. Aside from that, the steps are as follows:
1. Spread the olive oil evenly over the entire steak - including the sides.
2. Sprinkle the kosher salt on one side of the steak.
3. Sprinkle the black pepper on one side of the steak.
4. Press the pepper firmly into the meat.
5. Let the meat sit at room temperature while you prepare your Green Egg.

1. Get the Green Egg roaring - as hot as you can get it. If you've got a thermometer on your egg, have the needle buried over 700 degrees.
2. Drop the meat on the roaring egg grill, close the lid, and leave all vents open for one minute.
3. Flip the meat and let it cook at roaring temperature for another minute on the other side.
4. After the minute on side two of the beef, close all your vents totally, and let your beef cook for four minutes.
