Ingredients
• 3 each jalapenos: minced* |
• 1 onion, chopped |
• 4-6 Tbs fresh cilantro; chopped or to taste |
• 3 Clove garlic; minced |
• ½ tsp salt |
• 1 large tomato, chopped |
• ¼ tsp chipotle pepper; ground |
• ¼ Cup fresh lime juice |
Instructions
In a medium bowl, combine all ingredients. Cover and marinate at least 1 hour to develop natural juices before serving. Makes 1 ½ cups. Be sure to wear gloves when handling the peppers. NOTES : Best if made early in the day if having for dinner in order to give the spices a chance to blend.*Be sure to wear gloves when mincing jalapeno's. Do not rub eyes, wash hands thoroughly when finished.
