Green Sauce

Ingredients
• 4 Cup assorted greens (parsley, spinach, chives, watercress, etc) | • 2 hardboiled eggs |
• 1 Cup sour cream or plain yogurt | • Dash white pepper |
• 2 small onions, minced | • Dash salt |
• 2 Tbs cream (if needed) | • Pinch sugar |
• 2 Tbs mayonnaise (if needed) | |
• 1 Cup cottage cheese |
Instructions
Puree cottage cheese, eggs and sour cream in food processor until creamy and smooth.Wash greens thoroughly and chop coarsely. Add 3 cups greens and puree until greens are finely chopped. If needed, add cream and mayonnaise to keep sauce creamy. Add minced onion; season with salt, pepper and sugar.
Serve cold on thin-sliced meat.
