Green Sauce

Ingredients

• 4 Cup assorted greens (parsley, spinach, chives, watercress, etc)• 2 hardboiled eggs
• 1 Cup sour cream or plain yogurt• Dash white pepper
• 2 small onions, minced• Dash salt
• 2 Tbs cream (if needed)• Pinch sugar
• 2 Tbs mayonnaise (if needed)
• 1 Cup cottage cheese

Instructions

Puree cottage cheese, eggs and sour cream in food processor until creamy and smooth.
Wash greens thoroughly and chop coarsely. Add 3 cups greens and puree until greens are finely chopped. If needed, add cream and mayonnaise to keep sauce creamy. Add minced onion; season with salt, pepper and sugar.

Serve cold on thin-sliced meat.
