Ingredients

• 1 large egg
• 1 Cup vegetable oil
• 2 Cup cider vinegar
• 3 Tbs salt
• 1 Tbs poultry seasoning (bell"s, dizzy dust, old bay crab boil, etc)
• 1 tsp fresh ground black pepper

Instructions

Crack the egg into a medium bowl and whisk until beaten. Slowly whisk in the oil until fully blended. Then whisk in the vinegar, salt, poultry seasoning and ground black pepper. Marinate chicken in this for 24 hours.

1. Prep the BGE for a raised grid cook . (This is a direct cook except use firebricks to raise one grid off a lower one.).

2. Throw a handful of pecan, cherry, hickory, or maple wood chips on the fire (if you're using lumps, just one or two will do). cook the chicken halves at 350º for an hour (or until the thigh temp reaches 180). Use the boiled marinade to baste and flip the chicken every 10 minues while you cook.

3. Alternatively you could smoke the chicken halves. Cook them at 250º or lower for three hours or you get a target temp in the thigh of 190. Use the boiled marinade to baste and flip every 30 minutes or so.
