Ragout of Pigs' Feet

Ingredients
• 1 can Pickled Pigs" Feet | • 1-2 tsp Mustard (Dijon or Spicy Brown) |
• 1-2 Tbs Butter | • 1-2 Tbs Pork Gravy (from a can, would be fine) |
• 2 thin Lemon Slices | • ¼ tsp Nutmeg or to taste |
• 1or 2 Shallots, peeled and sliced | • Dash Salt, Pepper as desired |
• 1/8 Cup Sack (or substitute Sherry) | |
• 1 or 2 Anchovies |
Instructions
**Brown the butter in a pan and add the pigs' feet and slices of lemon (I wondered what the lemon was for too, but you'll know once you open the jar--whew!). Add shallots and sack, and reduce slightly. Dissolve in anchovies. Add mustard and gravy and reduce, again, to desired viscosity. Season as you wish and serve on "sippets" (pieces of French bread). Garnish with cranberries, if you wish--as per the original recipe. Serves 1 or 2 people.Notes
