Ragout of Pigs' Feet

Ingredients

• 1 can Pickled Pigs" Feet• 1-2 tsp Mustard (Dijon or Spicy Brown)
• 1-2 Tbs Butter• 1-2 Tbs Pork Gravy (from a can, would be fine)
• 2 thin Lemon Slices• &#188 tsp Nutmeg or to taste
• 1or 2 Shallots, peeled and sliced• Dash Salt, Pepper as desired
• 1/8 Cup Sack (or substitute Sherry)
• 1 or 2 Anchovies

Instructions

**Brown the butter in a pan and add the pigs' feet and slices of lemon (I wondered what the lemon was for too, but you'll know once you open the jar--whew!). Add shallots and sack, and reduce slightly. Dissolve in anchovies. Add mustard and gravy and reduce, again, to desired viscosity. Season as you wish and serve on &#034sippets&#034 (pieces of French bread). Garnish with cranberries, if you wish--as per the original recipe. Serves 1 or 2 people.
