Ingredients

• 1 rack St. Louis style spareribs
• Your favorite BBQ sauce
• Your favorite
• 2 Cup Hickory wood chips.

Instructions

Soak Hickory chips for .5 hour.
Remove membrane from back of ribs.
Rub ribs with dry spice.

Place ribs on rack inside of a pan.
Smoke on BGE at 300 degrees for 1.5 hours.
Add 1 cup Hickory chips to fire after 1 st ½ hour.
Add rest of chips after 1 hour.
Baste with sauce 10 minutes before done.

This will make ribs that are every bit as good as your favorite resteraunt with that &#034smoked for 8 hours taste&#034.

Notes

Your butcher should be able to make up &#034St. Louis style spareribs&#034.
I use commercial BBQ sauce and add Tabasco, Worcesershire, etc.
