I was looking around the USDA website, they recommend cooking food straight out of the fridge & say partial cooking is unsafe.

    If you are cooking meat that goes bad in the 20 minutes or so that it takes for a T-Rex'd piece to rest, then you might want to find a new butcher. LOL. Seriously, the sear/rest method is used in many types of cooking. Say, for instance, you are stir-frying. In most recipes, you partially cook the meat first, remove it, add the veggies and whatever seasonings, then add the meat back in at the end. 20 minutes isn't a whole lot of time for the nasties to incubate. On the other hand, if you've had the meat out on the counter for an hour or two, then that's a whole different ballgame. Let common sense be your guide and you'll be fine. Good luck![p]Jim

    You can let that meat sit at 90° for 3 hours and 30 minutes as long as it got from 40° up to 90° in less than 15 minutes and as long as it gets from 90° up to 140° in the remaining 15 minutes.[p]You have 4 hours in the danger zone before nasties can propogate to the point of causing an illness.[p]Just remember, that window applies to the entire process, before, during and after the cook.
