Dead Simple Spatchcocked Chicken

Instructions
Spatchcock the chicken:With sharp kitchen or poultry shears, cut the backbone out of the chicken by cutting along one side of the backbone, then along the other. Turn the chicken over and press down to flatten it. If you find that the chicken doesn't want to stay flat, you can use two skewers in an "X" pattern to hold it flat.
Stabilize your egg at 350 degrees. Place the chicken cut side down on the grill. You may want to open the air vents for a short time to help get the temperature back up to 350. Cook for 20 minutes. Turn the chicken over and cook for 25 more minutes.
Notes
You can add your favorite rub before placing the chicken on the grill. You can also add your favorite sauce 10 minutes from the finish. Smoking is optional. I used BBQr's Delight Orange smoking pellets for the entire cook.Number of Servings:
