the NATURE BOY knows what its all about . .great chicken last night

the other night, my buddy the virginian came over and grilled some chicken thighs. ..following nature boy's advice, did a direct set up with a grid extender set on the regular grid so that the chicken was way up above the fire. .. grilled them direct at around 300 degrees, turning once or twice till done. .. .brett said they were really good. .. [p]so last night i did the same thing (i almost always cook chicken indirect these days, so this was indeed different for me). . .picked up a a couple packages of chicken parts (bone-in breasts, thighs, drumsticks, wings).. .spun them up with some dizzy tsunami spin.. . put them on that raised grid over a 275 - 300 fire with a chunk of guava wood. . .and let them go for about an hour or so. ..saucing them with some sweet baby ray's for about the last 15 minutes.. .. [p]dang were they good!! .. .family just loved them.. .sometimes i think i forget that simply grilling food on the egg is so superior to grilling on other cookers, that you don't need to do anything particularly special to get special results. .. .and with those dizzy rubs, it just raises the food to another level. .[p]thanks nature boy (and brett for passing on the technique), old buddy, buddy . .. .

    mad max beyond eggdome,[p]That's what I try to tell people that ask stuff like "don't you get tired of smoking stuff or lo and slo's?" [p]My answer is "no, but I see what you're asking." [p]If you don't do anything special on the Egg and utilize none of it's additional capabilities, it's still the best grill you'll ever own. Period. That alone makes it worth the price, and when you factor in everything else it can do, I don't understand anyone that DOESN'T have a Big Green Egg...or three.

    it is really sweet, that's for sure. ..my wife, who normally doesn't like things that taste smokey, really liked the flavor of the chicken last night. ..that stuff is a winner. . .that's for sure. .. [p]good morning right back at ya. . .

    <p />Ol' Darryl was a huge inspiration years ago with his "everything but brisket goes direct" attitude. I don't take it that far, but with a nice controlled burn you can do some pretty cool stuff right over the coals. Glad we could inspire. Credit for so much goes all right back to this forum.     <p />Babyray,[p]Guava Wood rocks! Greg Kemp ships out a box for $15 from Hawaii and here's what you get. Nice chunks with no bark. Greg must be good at jigsaw puzzles because he manages to get between 10 and 11 pounds into a USPS Priority Mail box.     I agree! I have only tried it with chicken and a pot roast so far but it really is great flavor! The chicken was beer can style and I added the smoke at the first of the cook for the roast and then once again at the end after the potato's, carrots, and onion had cooked for a bit. Hmmm it really did add great flavor too them! Even my super taster wife who say's every thing is too smokey said she liked the taste! So for anyone who doesn't like much smoke, guava wood might be for you. Thanks to Greg Kemp really great deal and fast shipping. I have paid a bunch more for a lot less smoking wood. Jon[p]
