Sauce for Pork Loin?

Here's the scenario: I've got a pork loin marinating for this weekends cook. I'm a sauce kind of guy. I need some suggestions for a non-tomato based sauce.

Andy R.,[p] What are you marinating it in? Would a fruit sauce work? I played around once with a reduction of dark rum and dried cherries that worked pretty well. Apples are also great accompaniment to pork. Maybe you caould try sauteeing some granny smith apple, sweet onion and garlic in some butter until soft, then adding some spices (cardommom, cinammon, nutmeg?) and rum. Reduce to the consistency you want -- salt to taste . . . Possible?[p]MikeO

MikeO,[p]You have teased my taste buds. The marinade is more of a Southwest concoction. Something along the lines of a roasted red pepper sauce might be the ticket.

Andy R.,[p] What a great idea! I've got a good recipe for a roasted pepper sauce at home but haven't made it in a while. I used to use it on pan-fried chicken and turkey cutlets pre-BGE. No reason you couldn't eat it on pork, too. I can send it once I get home if you like.[p]MikeO

Andy R.,[p]If you live anywhere near a Costco, pick up Fischer & Wieser Roasted Raspberry Chipotle Sauce. This stuff is so good my husband was dipping bread in it when there was no more pork loin roast left.[p]Mardi[p]
