Dave,[p]indirect Dave. And while there are as many particular recipes as there are folks out here and more, the baseline I've found is to cook indirect at 250 for 5.0 to 5.5 hours. In that time, I cook about 3 hours indirect, then 1.5 hours wrapped in foil (or in a foil drip pan with a foil cover) and finally the last 30 minutes uncovered (some folks do this part direct). [p]Sauce 'em the last 15 or 20 minutes, or not at all. They rule either way.[p]p.s. I've even done them leaving the membrane on and they were still amazing and easy to eat.[p]HTH
