ABT prep question re: large quantaties...
Hi all,
I want to make a huge batch of ABT's for my litle brothers bachelor party this weekend, however I would like to try and spread the prep out over the week (or a few days).[p]First question - if I was to half and ssed the peppers this early, and simply leave in the fridge - will the peppers wrinkle up, or have any other negative affect?[p]Second (and last for now) question - If I should not leave the peppers alone (split) for that long, and should fill and wrap ASAP after halving - should I be freezing them until cook day, or wil sitting in the fridge from Tuesday until Saturday afternoon be ok - the filling will conatin no meat, just cream cheese and flavorings. My major concern is with the bacon wrap - will that time frame get me into the danger zone of food safety?[p]Thanks

I too like to spread the prep process out and I most always de-seed and de-vein the peppers two days in advance with no noticeable effect. I just place them in a sealed bag and pop into the veg drawer. Once I had a problem come up and it was 4 days - no problem then either. These I did yesterday I had prepped 28 hours earlier with bacon et al.

You'll be fine, just don't freeze them.
It breaks down the flesh and they lose
their shape and crunch. (he says from experience)...
