Bobby-Q, now that is a good looking loaf of bread. All that is missing is some good chicken or pulled pork to make a 'BBQ sammich'.

Well for me this time it was sort of a combination. I didn't want both of my ovens going because that really heats up the kitchen (haven't installed the ventilation system yet). I also like the flavor that the WGC imparts to bread and with all the ceramic mass available on the egg it really sucks the moisture out of the loaf and creates a very nice thick crusty bottom.[p]I kind of feel the same way as you though sometimes when folks do like cakes or something on the egg. I guess there is always the "because we can" explanation.

This is actually the Bernhard Clayton First White Bread recipe. If you don't have his book, The Complete Book of Bread, go and get it. He spent countless hours developing this recipe to use in his classes so that it would be perfect and provide the WOW factor needed in a student's first loaf.[p]I've got probably 6 or 7 recipes for white bread that I use, but I oftentimes just go back to his because I respect him so much for researching his own recipes.[p]I can list out the recipe if you need it, but I'd rather you go get his book...pick up Dr. BBq's while you are in the food book section.

Morning Lee,[p]Most of the finest bread stores in the country bake their bread in a wood fired oven. When done right, it should leave only the lightest hint of smoke flavor in the bread. In many folks taste, this is an improvement to the bread. However, it is just super easy to oversmoke the breads especially in the smaller cookers or smokers. It takes a very clean burning lump fire for best results and you can get this off of your cookers as they will bake some wonderful bread. [p]Hearthstone baking adds another dimension to make your bread better and works on many types of breads. These stones are pourus (sp) and will very quickly pull the moisture out of the crust resulting in a more crispy crust which again, most people will prefer. A hearthstone doesn't care where it is at so it works equally as well in your kitchen oven. [p]Knowing where you live, I know you could call around to the better bread stores near you and ask if they use real wood fired ovens and if so, go get yourself a whole or half loaf of some type of sourdough hearth bread hot out of the oven for a real treat to see if you like the very light smoke flavor of the bread. Don't let them sell you something off the shelf and wait for something fresh right out of the oven. [p][p]The above picture is two hearth loaves of Challah bread ready to come off the cooker. This is a wonderful hearth bread and is always great over a wood fire. [p][p]The above is Kolach hearth bread and this is a super rich tasting bread that is very good and pretty easy to make.[p]Regards,[p]Dave[p]

Mike _W,[p]Amazon does have most of Bernard Clayton's books including the one mentioned. It is a hardcover called "Bernard Clayton's New Complete Book Of Breads 30th Anniversary Edition". It is 22.95 new and about 7.50 and up used.[p]If you could only own one bread book in your life, this is the bible you want. [p]Dave
